It just comes down to personal taste. As far as the powertrain goes, there's really nothing different about the Nismo Z compared to the standard Z's. Go search the exhaust section for an exhaust that fits your preferences (loud/quiet/not raspy/single/dual/etc.), and then make a decision off of that.

Not that many people have aftermarket exhausts on their Nismos, so you might have to use your imagination as to what it would look like. But if you search, you will at least find pics of the 2 exhausts you just listed.

Will any 350Z exhaust fit the Nismo rear bumper?

For the most part, they should. I heard something abut the s-tune exhaust not fitting, but I don't know if it's actually been tried. If the s-tune doesn't fit, I'd imagine it would be from the angled tips. So anything with straight tips should more or less fit.

I know the JIC single requires a little trimming to rear diffuser and the AAM 3" single is a tight fit and rests against the diffuser, but shouldn't require modifying anything.

Go for the shinny one that makes your car sound like a Ferrari. I forgot the name.

I have a JIC single with titanium can and stainless piping. It does have a very raspy sound if your in to that sort of thing. It does require you to butcher up your diffuser a bit, but you really can't tell the difference. I can say with this single setup you will save about 50-60 lbs. The stock stuff is heavy.

I'm a firm believer of Cherry Bombs for a good exhaust note. If that's too much for you, try Midas high flow with a Z pipe.
