GF's Birthday Coming Up: Need Suggestions Por Favor...
I'm down for Karting! I haven't been to the new kart track at sears point-or are you thinking of the indoor place in SJ?
When I purposed to my GF, I took her to the Starlight room (union square-great view of city) and then to Gary Danko ($$$$$). Both places were really nice. Another dinner place is the Equinox - it's the rotating restuarnt ontop of the SF Hyatt (market and Embarcadero).

[1] Very light drinker.
[2] Loves Japanese Food but open to whatever so long as it's not oily.
[3] Down to do crazy activities. (We went skydiving a few years ago)
[4] Down to see the Arts (Musicals, Concerts, & Museums)
[5] Likes dancing (Hip-hop, R&B, Raggae, Pop, Alt/Rock, 80's, 90's)
[6] Down to do some site seeing.
Ok heres an idea for SF
[1] Night tour of Alcatraz, this was actually kindov interesting. I finally went after living here in CA (You need to reserve this quick as it books up fast)

[2] Have dinner @ CityScape with the nice view at Hilton in SF . Perhaps stay at Hilton as well

[3] PopRoxx @ DNA Lounge (Fri). Was there for a FOB night and saw this coveres your alt/rock and 80s as well as a live band playing. 2 different rooms if you don't like one rooms music..

Otherwise there are tons of events not sure whats going on that weekand, Tribeca, Abzolut, Element, Really depends what your into...

That's cool you're thinking of your gf and something new to do. My wife and I are celebrating our 2nd year anniversary this week, and I'm taking her here:

For the city, if you want dinner and a show (so you don't have to worry about driving around), you can check this out:

They've got plenty of parking there, it's definitely something different, and my wife got a kick out of it.
Some other ideas, based on your comments, is wine tasting (if she's a light drinker, you can still take her). You can make a day of it, grab a lunch bite in Yountville, maybe take the wine train, and if she's never been up there, maybe drop by Mondavi, have her drink some Muscato's (ladies love the sweet/dessert wines, typically), and maybe finish off with a nice dinner at French Laundry. You can mix it up out there, maybe including a spa package at Sonoma Inn, but you get the idea.
Another idea, if you're traversing down to Monterey/Carmel, is Spanish Bay Inn for the spa stuff, and dinner out there. Roy's is also located at Spanish Bay, which is Hawaiian/Japanese/Cali fusion, and is located by the golf green, with ocean views. For Carmel, I also concur with the Casanova recommendation, but you get the idea on that as well.
Now as for the carting, unfortunately SpeedRing has shut down in Santa Clara sometime ago. But Lemans Karting in Fremont just repaved their track, and their carts are faster than Speedring's. In fact, I'll be carting there for kicks with a group of my track buddies on Monday. You may want to check them out, too.

What about a little getaway to Vegas? You could also buy her a nice ring or jewelry to give during the trip to say thank you for her close frienship. You'll probably go a little over $500, but if you really like her she's worth it and you'll both enjoy yourselves.

Thanks again everyone for your suggestions! Tried the sneaky approach with her by just browsing around the internet while she was there. She pointed out that she'd want to go to the Ritz-Carlton in Halfmoon Bay someday because it looked so nice. So it looks like that's where we're heading off to for her birthday
. BTW...she mentioned again that she'd liked me to setup a Go Kart Racing Meet so I guess I'm going to see if I can set one up around October
