Canon Rebel XT w/ kit lens, I ps'd the pictures with the Z to add teh border and get rid of the license plate.

Mmm... that is a hard one!! I have had 3 DSLR's so far (all Canon) so I have taken literally thousands of shots 
Some of my favorites:
Nature (Macro): Canon 1D Mark II N, Sigma 105mm f/2.8 Macro
Landscape: Canon 10D, Sigma Fisheye 15mm f/2.8mm
And of course the Z!!!: Canon 1D Mark II N, Canon 17-40mm f/4L
All have some degree of PS processing, but with exception of the last one, all of the post-processing was quite mild. On the last one the selective desaturation was the hard part to do right, the rest was just regular level adjustments.
