The body you choose isn't going to be THAT big of a deal. The XSi and 40D are essentially the same camera. The 40D has about double the FPS (frames per second) as the XSi, which would come in handy if you plan on doing a lot of sports photography. Also, the build quality of the 40D is going to be slightly higher as it is a prosumer camera instead of a consumer camera like the Rebel series. Other than that, the sensors are the exact same, both have the same LCD screen with Live View, same Megapixels, etc. I have a friend with an XTi and he puts out just as good, if not better pictures than I do with my 40D.
My advice to you.. spend a little bit more on a nice lens. The lens you shoot with will make your shots 100x better than a body will, IMO. A Rebel XT (350D) with a 70-200 f/2.8L would take MUCH better photos than a 40D with a lesser quality lens.
Also, don't go the cheap route on memory card. This may just be my personal preference, but when you are dealing with a nice camera capable of taking some very high quality RAW/JPG files at 3+ FPS, you're going to want a memory card that can keep up. A cheapo memory card like in the kit you posted from eBay would be MUCH more likely to produce error photos or no photos at all than a nice Sandisk or Lexar (my 2 favorite brands). Try to find a memory card with at least 20mb/s write speed.
Hope this helps! Let me know what you decide to do camera wise. Glad to see another member interested in photography
