uTec reset by stock ecu?

uTec reset by stock ecu?
I'm pretty new to this so bare with me.
I originally bought my 350z with a turbonetics single turbo already installed with the utec system. (I got a great deal so I decided not to buy a stock and do it myself). The owner said it needed a new tuning because it had a problem.
The problem being that every once in a while you would stop and when you tried to start going again the car just hangs at 3000 RPM, you then can turn it off, wait 30 seconds, and then drive again with no problems.
I went to go get it tuned and the guy said that this was happening because the Stock ECU would randomly reset the utec map settings back to default causing this to happen. He went ahead and tuned it and everything ran great for the rest of summer and till just recently when the temperatures dropped to below freezing (I live in TX). Now the problem has started to occur again, just a little less frequently.
Is it possible that the ECU is resetting the utec causing it to have this problem? Or is it just the sudden drop in temperatures? (which I would think would make it run better).
Sorry if this is a stupid question, but no one I've talked to has really been able to help.

the stock ECU does nothing with the UTEC. The UTEC has 100% control over fuel/timing in open loop (boosting). In closed loop, the stock ecu has control (vacuum). They are separate units.
So is this hang at 3000 rpms when you are on boost or not. Your temp corrections need to be setup in the UTEC, but the basic ones it comes with are pretty good.

No, they do not come on solid or at all when this happens.
