will 285/35/19 work on stock grand touring wheels?

well i somehow managed to drive over a fat screw that entered the tire from bottom and penetrated the sidewall....so needless to say the tire was gone 
none of the local shops had the potenza reo50a in stock
but i found someone that had a conti sport contact 2 in the same size in stock, the tread is very similar, so i went for it.
but i'm def. changing to 285/35/19 when it's time to change tires
the 265's look stretched anyways

Will work perfectly and look fantastic. That is the same setup I have on my GTc as of two days ago. 285/35/19 rear and 255/40/18 front. No VDC issues. No rubbing concerns.
But do keep in mind that your speedo reading will be slightly off. Also, the brand of tire you choose will also affect rubbing. E.g. BFG KDW2 is a chunky tire while Toyo Proxes are not. I went with the latter.

That's weird because moving up from 224/45/18's and 245/45/18's to 245/40/18's and 265/40/18's keeps the overall diameter almost the same as stock sizes.
Wonder why it's so much different moving up from 265/35/19's to 285/30/19's.

As my sig suggests, fronts are 255/40 on OEM GT 18x9 wheels and rears are 285/35 on OEM GT 19x10 wheels. Toyo Proxes T1R.
The great offset of these wheels is what truly makes this rear tire size look good.
