First of all, the offset you listed above is little conservative for 350Z. Your wheels/tires will be little too tucked. You might want to add some spacers if you want it to look right.
As for tires,
Front: 245-40-18 Rear: 275-40-18

I use to have Volk SF Challeng on my Z Roadster and these were the offsets.
F: 19x8.5 with +21 offset.
R: 19x9.5 with +23 offset.
Also, Z can take little more aggressive so 15mm spacer with your current setup should work.
As for spacers, try to get a name brand. I had Kic's spacer and they were pretty good.
The good thing about Kic's sparcer is that you don't have to get long studs. Its like an adaptor so spacer get bolt on to the rotors where stock studs are and spacer has its own studs comming out which you can use to mount the wheels.

Thanks for the info ssk.. I will look into them a little bit more.
But from reading into this a little bit, this is what I do not understand.
hese are stock specs:
Base Enthusiast
front - 17x7.5, +30mm
rear - 17x8.0, +33mm
Now, if I am putting on a rim that has just 2 more mm offset in the rear (+35mm), AND the rim itself is a full inch wider.... why would that not stick out more??? I must just be missing something really stupid here... but I really appreciate all the help you guys are giving me!

Thats why some guys that are buying 19" Rays OEM wheels for G35/G35C use spacers.
Car just does not look right if wheels are too tuck in. Especially with after market wheels.
Another example is I drive an SC430 where the factory OEM wheels are 18x8 with +45 offset(estimate???) all the way around and I am currently running 20x10 with +23 or +24 offset in the rear which is way more aggressive that stock/OEM wheels.
Car companies like to play safe so they use conservative offset on OEM wheels.
