Dude just stick to the recommended OEM sizes.
You utilizing a bigger tire than what can fit properly will net you zero performance benefits.
In other words, you slapping on a bulging tire will not get you any advantage, hell I see you at a disadvantage for the added weight. If your car is pretty much stock, then the OEM sizes are absolutely plenty grip. If you say no that is because you cannot drive and do not know how to optimize grip.

You have 8" wide fronts and 8.5" rears. You can safely run 245/40/18 in front and 265/40/18 in the rear. I would not go any wider on your stock wheels. Contrary to what has been said, your Z will handle and look better.

Another popular setup is stock sized rear with 245/40 front. This improved the handling and does looks better than normal stock sizes.

ill give you a response.
on an 8.5 wheel. go 245/40. or 255/35. its not science. you wont lose any performance but just feel like you put new tires on.
my suggestion, buy new wheels before you start spending money on tires.
bye.

I also like the stock 18" 350z wheel/ IMHO, it's one of the best looking stock wheels out there.
Actually these are the tires available in the 245/265 combo:
