Always loved this thread - got the idea for my rims and tyres here! 
Rims - Volk CE28N Genesis
Fronts - 19x9.5 +22
Rears - 19x10.5 +22
Tyres - Michelin Pilot Super Sport
Fronts - 265/35/19
Rears - 305/30/19
No VDC Issues, little bit of scraping over bumps at speed on the rear where the rear quarter meets the back of the rear bar tho, even after flaring guards about 13mm and having them rolled...
My weirdest issue is that when i turn left at carpark speeds, the right tyre rubs the inner plastic guard well, but only on the right side??? Hasnt been a major issue for me, so havent looked into it very much yet lol
Not sure how low i am tho, but i'd say its probably pretty close to oem... running BC BR coils (made em an inch shorter than stock shocks before installation) and camber is all oem, or close to it...

Alex, I say go with a 255/40 & 285/40 to start. Could go fatter on the rear with a 305/30.

Put your oem or current wheel size in the left box, and the new size in the right. The calculator will compare the two wheel/tire sizes to give you an idea of how itll fit.

Just go with 18x10 on all 4 corners. Really you should do 11 in the back but if you only want 10 then do that on all 4.
I got 18x10 in front with 265 35 and back 11 with a 295 35. With just a roll and i am low and have no problems.
For you just do 265 and for back 285 35
What offset you thinking of?

Those don't look like 40s. But ya your best bet is to use the calculator. Cause also honestly my factory wheels on my 08 Nismo in the rear... 19x10 with 265/35 potenzas look a lot thinner then my new 18x11 with 295/35 bfgoodrich that look a lot taller then I expected. So it has a lot to do with the tire brand you select... some have that fat look some don't.

Please ignore me if you already knew this, just something I learned the other day on a flight reading motortrend or some car magazine of the like. The 35 actually denotes that the sidewall height is 35% of the tires width. While I agree different brand tires run different sizes for the same advertised size (one brands 285/35 vs. another's) a 265/35 should have a sidewall height of 92.75 mm while a 295/35's should be 103.25...

295/30/20: The first number is the (approximate) tire width given by the manufacturer in mm. The second number is - as you've said - the aspect ratio, and the third number is the height of the opening (for the wheel) in inches.
295*.3 = 88.5mm, but there is sidewall on both the top and the bottom of the tire, so the total sidewall is 177mm.
177cm * 1" / 25.4cm = 6.97" of total sidewall.
7" of sidewall + 20" wheel opening = 26.97" tall tire. (Stock 245/45/18 rear is 26.68" tall, so this is a touch taller by about 1%.

Looks like you have the general idea, however, maybe this will clarify a bit, and people won't need "online tire calculators" to figure out the height of tires:
