Those sizes (tire/wheel setup you describe) will work fine and look good.
Does your car have VDC?

Edit: 255/45-18" is a little tall for the front. If you do not have VDC, you're probably OK. Not sure if such a tall front tire will mess with your ABS though.

I take back what said earlier...I'm an idiot:
- I wasn't thinking about VDC
- I've heard of people using 245/45 on the front. That's already 2 sizes bigger than stock. So, going 255/45 might be pushing it as it will be probably over 1" taller.

Alright then, I'm going to rephrase the question. I have a set of 18x8.5 +20 offset work cr kai's that are going on a 2003 Touring model (VDC). What would be the best square tire size?
P.S.
I went to the tire size calculator on the miata forum and it looks like 255/40/18 in the front and 255/45/18 in the rear to keep VDC happy. Any suggestions?
