I wanna get some enkei t6r rims, staggered 18x8 38 in front and 18x9.5 40 in the rear, but I’m worried that the +38 offset in front is too much and might cause rubbing
and same thing with the +40 in the rear.
Any thoughts? Would love to get some feedback and maybe other suggestions.

This. ^^
Will note as well.... if you're going to the trouble, time, and expense to upgrade wheels, go to a better sizing. 8" is a weak "upgrade" as it's stock width. Go with widths that support tire upsizing.
Preferred setups:
8.5F/9.5R
9.5 square
9.5/10.5
As mentioned, offsets from +15 to ~+23 depending on tires and drop.
Tire sizes: 245/40-18 (or 255)F, 275/40-18R. If 19s, substitute 35 for the 40.
