Go to www.Nissanusa.com Find the 350Z page and click on Specifications. They have a nice chart comparing the features of each model side-by-side. Its pretty detailed.
touring is the most popular, enthusiast is also popular due to its value, probably the best of the group. base is for the hard core guys, tho many think the 2000 for enthusiast is way more than worth it, but those wanting to do extreme mods dont care for those options.
as for track. the rims are nice. brakes are nice, but there are nicer brakes out there, and rims are subjective, a good rim, but personally Im not a huge fan of the design. but others are, and thats how that works.
performance is kinda a little left out, since for 2grand all you get is VDC TPM and 18" rims, but not light ones. you can get nav on this one tho.
all are nice, find what fits you. and dont feel too locked in. if you go touring, there are many brakes and rims to replace later(including better brakes from brembo). or if you go track, aftermarket leather is about 1000$ and then a stereo of your choice. heated seats and mirrors are gonna be tough to do tho.

I like the touring model myself. Leather, power mirrors, and Bose sound system are nice.
I do not need/want the 18 " wheels, Brembo Brakes of the Track model.

If I get the car it will get aftermarket wheels, perhaps my Forgelines off my T/A will fit? I will also upgrade the stereo system. So the touring model is looking pointless for my application now. I wish you could get leather/power seats with the enthusiast!

But for extra $800, an upgrade to aftermarket leather is possible, with even more leather color/texture selection.
Without power seat can sometime be cumbersome, but if no one else drives the car but yourself, once the seat is positioned to your preference, there is no reason for readjusting, so the seating adjustment is a one time thing; except if someone else gets in and changes seat position.

I wouldn't worry about the power seat. It is only back and forth, and power tilt. Even the lower part tilt is manual.
Also, there are aftermarket seat heaters, and they don't cost that much.
I got touring because of the good deal I worked out. I would have been as happy with performance probably.
