If the dealer's GM didn't do anything about it, I would threaten legal action.
You do sign a release, if something they have no control over occurs, it's not their fault. However driving someones car for 360 miles without their permission, for no service related reason, can get them in legal hot water. It really depends on your local and state laws.
The fact that they documented the miles is even better for your case. If you find anything wrong with your car, their a$$ is hanging out in the wind.
I would demand a written apology, reimbursement for the miles put on the car, and action against whoever took possession of your car for their own personal use.
If it was here, I may even consider a warrant for the person who "borrowed" it.

the funniest thing is you already stated they are straight forward , but, yet they racked up 300 plus miles on your car and told you they arent gonna do anything. sounds like a straght up dealership with good people to me
and which was it over 360 miles like in your first post or 340 miles like in this one? they can say the mistake was just as simple as your mistake you just made.
I don't think there's much that you can do, other than maybe call your local watchdog organization or the newspaper, to see if they'd be interested in the story, but I doubt it.
Without having knowledge of how the milage got on there, such as catching them on the wrong side of town or something, I doubt you would have much of a case. I imagine many judges would view it as petty, unless you can establish where they went, or that they've made this a habit, but then again there's always the off chance that justice might prevail.
