Sorry, did I miss something? What is preventing a chop shop from parting out an exotic? He never said he was gonna keep it. I think he meant if he was going to put his *** on the line to break the law, he would go for something that will bring back more profit. Like parts from an exotic.

That was kind of a cheap shot. When you steal a car, you aren't going to be able to keep it. Mustangs does fairly well parting them out for parts especially if the engine is modded. Just like how hondas and acuras are good money makers and are high on thieve's list.

Some thoughts:
The 350Z does not have an alarm. You think it does, but it does not. Once again, get it out of your head. The stock alarm is a farce!
After recently having my Z stolen (2 months ago) and then recovered with a stripped interior, I have no faith in the LAPD that they could work the LoJack systems (long scary stories of incompetence).
Once the car is gone, do you really even want it back? Mine is still in the shop for the past 2 months, and expecting to be there another month because Nissan cannot provide the necessary parts which are on back-order.
Read about car theft on the internet. Pros who might flatbed the car will take the car underground, where LoJacks radio based system will not work.
A start is probably a good 2-way pager alarm with shock sensors. May act as deterrent, and will notify you if someone is messing with car which may give you a fighting chance (whether or not to take on car thieves physically is a personal choice).
In addition to the aftermarket alarm, the best recommendations I have found are these:

No car equipped with this device, cheaper than a LoJack, has ever been stolen so they claim. May be true or not, but looks like a smart deal.

I'm talking about a DEI Viper piece. You don't pay $40 a month for it, though. What you do is select a package when you purchase the service, and the amount you pay determines how many 'connections' you have at your disposal. Every time you pinpoint your car's location, determine its current speed, etc., you use one of these connections. I paid $150 overall with mine, and I got one hundred connections. I'll NEVER have to use a hundred connections. Plus, for 150, you'd only get three months of coverage with one of those other GPS systems, whereas with this you're covered for as long as you've got the tracking system.
It works in conjunction with your alarm system, too. Like Billdo said, it's a good idea to get a two-way pager alarm system. I've got a Viper 7900, myself. It's a two-way pager with a fully animated and color LCD screen, 1.5 Miles in range and the ability to individualize and control different zones of the car directly from the remote. As soon as the alarm's triggered, it'll alert my remote. But, not only that, it'll also call my cell phone because of the GPS, just incase I'm more than 1.5 miles away from the car. I'd really like to see someone try to get into that thing.
Edit: Another good idea is to add sensors galore. Proximity sensors detect movement within the immediate vicinity of inside and outside the car, glass breakage sensors help to prevent a failure of the shock sensor to trigger the alarm if the thief uses a silent glass breaking tool, and tilt sensors detect... Well, tilt, and changes in altitude if your car's being flatbedded, or towed.
