I'm having problems enjoing myself sliding the rear of the car all the time
What kind of turns are we talking about here? Sharp 90 degree turns like in a city?
What is the proper technique... I'd like to practice
All I do is just floor it in 2nd towards the end of the turn which produces nice effects.

Jesus, I can't believe some people (on a car board for crying out loud!) are getting confused about under/oversteer. That's like confusing wheels and tires!
And by the way, the 'correct' definitions are as follows:
Understeer: front tires' slip angle is greater than the rear tires' slip angle
Oversteer: rear tires' slip angle is greater than front tires' slip angle
Understeer results in yaw angles that are lower than neutral (neutral != 0 though). Oversteer results in yaw angles that are greater than neutral.
