Which Base Should I get
So, I just wanted to know which base would be best to buy if I'm going to add my own mods to it and be doing things to it I'm not going to be taking this car to the track just be driving it around to work and etc. Also do most 350z have oil problems like where it overheats and stuff cause that's what I've been reading but not sure if it entirely true.

Most 350Zs that have "oil problems like where it overheats and stuff" is usually from someone doing "my own mods" to it, or just plain lack of maintenance. Whether it's an early or late model production Z33, the only year that seemed to have oil consumption issues was the '06, which used the VQ35DE rev-up engine.
Like any used car, get ready to pay for an independent Nissan tech to do a full mechanical assessment of the entire vehicle. Should cost $200-300 for an assessment and is well worth the cost.

I would add that - "if you are not taking it to the track" - get at least a model above the BASE trim just to make sure you get the limited slip diff. It may be a viscous unit and "not the greatest" as you'll read but it still functions better than an open diff for any type of mild, non-track performance work.
The rest is up to you..... do you want the Bose (no, you don't
If you want to go sideways into a ditch because it's sprinkling outside and Florida used sea shells in the pavement causing oil to come up to the surface when it rained and it's not your fault get a base model.
Or for track use.
