I showed my boss the thread and he agreed with the price. The alarm install itself adds a lot depending on what modules need installing. With wiring, fuses, harness's, and kits it all adds up. But I wouldn't want someone rushing to finish it in one day. Seemed high till he broke it down for me. I guess thats why I install and he writes the bills.
On a side note, most shops charge per the job, not by the hour

Well, still, there's nothing like the satisfaction you will get from a great, and simple enough, DIY.
I dunno much about alarm installs, and may have overlooked that in the $700 quote you were given, but that is more $$ than I'd dish out for something not even "custom." Everyone will have their own opinions, and this is mine.
...still, though, just don't bite off more than you can chew! If you absolutely have NO clue when it comes to car audio and/or are not willing to put in the time/effort.. it may be better to leave it to the "pros."

i would be hesitant to accept an alarm and full system install that was done in 8 hours
that is to fast
he will be in rush mode
when you rush you make accidental errors , and and are trying to cut corners
i could not do an alarm and install in 8 hours would not even try
3-4 hours on alarm
6-10 on system
but if you feel comfortable use them

there is $100 right there
wiring harness
trim kit
antena adapter
if you thought the quote was to much at $700
i bet they can't even do it for $700
rent, electric, telephone , insurance, installers labor ,
with this overhead , you are not a smart shop owner if your not getting at least $50 an hour labor
and yes some shops quote by job and not hourly
$700 is fair
IMO
i would not do it for less
