Looks to be only a few options here.
The car does not overheat. What I don't like about it is that it goes to 215 then back to 190 and shuts off, back to 215, then 190 and on and on. This all happens literally within minutes. So, up and down, up and down. I would really like to maintain a more consistent temp especially while at the track. I have seen the HKS fan controller and I may give it a shot. Thanks for the responses guys.
