can somebody help me out and tell me which fuse needs to be pulled in order to depressurize the fuel system?

Well, I have a G35, so i'ts a differnet fuse, however, i'ts easy to find. Behind your battery there is a main fuse box (total of 3 in the car I believe), you have to slide the huge cover over it and there is a diagram on which fuse is what. With the car running, pull the fuse is what I do, wait for it to die. Then i unscrew the fuel regulator and dont pull it out yet, i let the pressure sort of die down. After about 15 mins I wrap towles around it and pull out, fuel will spurt eveyrwhere still depending on how long its been since you drove the car. I did mine right after i was driving from work and it squirted all over my damn face... heh. fun stuff

I forgot to bleed the fuel pressure when I installed my Vortech kit using the fuse method but, when I did separate the coupling on the frame rail after the car was setting for about 1.5 days I got very little fuel spilling. I was certain I was going to take a bath in gas ...

Like narkotic said, I believe it is labeled on the fuse block cover.

Why would one need to do this ?

The fuel pump relay fuse can be found in the IPDM E/R (Intelligent Power Distribution Module - Engine Room).

The IPDM E/R is the large black box located just behind and a little to the right of the battery.

The fuse you want is labeled #81. It's the lowest (red) fuse in the left hand or outboard row of fuses.
