Ive tapped into the stock knock sensor with the Zietronix user input . It logs the voltage , and it is at 2.53 volts under normal conditions . At 6000rpm to 6500rpm's the voltage starts to get a little wavy and goes up and down from 2.29 to 2.63 volts . Would this be just engine noise , or actaul knock ?
On one of the logs , I did get some spikes to 3.6 volts and I took them as actual knock and retarded timing by [1] degree and I havent gotten any big spikes like that again . Just the slight up or down in volts .

I have the exact same setup (Zeitronix connected to knock ECU wire). I also get around 2.53-2.56v, but it stays around those numbers all the time, even at WOT. I can send you some logs if you want...

the logs were done at wot? cause at low throttle the ecu advances the timing to the point of knock (about 40 degrees) and that is problably why you get those spikes.
