Default Running crazy rich

Okay so anything above 4 psi and my AEM UEGO pegs out at 10 to 1(though i am sure it is much richer). Anything where I just put along and the air/fuel is almost stoic. Also, after changing out the plugs to NGK one step colder, the car violently jerked when i got on it, but this went away shortly after running the car a bit. I am running the vortech kit with the 2.87 pulley, 600cc injectors, AAM basic fuel return system, AAM reflash. All this happened after racing a friend at high speeds. Also I took the car up to probably 170-175mph and it pretty much hit fuel cut. I am resetting the ECU by removing the negative terminal for a day or so.

Is it possible I damaged the blow off valve? If so how could I check it.
Is it possible I shorted out the MAF?
Is it possible I damaged the throttlebody?
Is there a "safe mode" on either the ECU or the split second box that would cause this?

does it act as if its running real rich ? bogging down ? not much power ?

you could have an injector stuck open
