Default Vortech SC issue with oil pressure.....

I had a track day a couple of weeks back and I ran into 2 issues and I was wondering if anyone else has had similiar problems and solutions.
issue- Car overheated on the track and the coolant bubbled out of the over flow tank ( I didn't do a cool down lap plus I shut off the engine once I pulled into the pits......I'm a newbie to the track so I didn't know to leave the engine running for a couple of minutes)
Plus at the same time my car started over heating my oil pressure gauge showed almost no oil pressure. We topped up the coolant and checked the oil, took it for another couple of laps and the car started over heating again brought it back in and noticed there must have been a bubble in the coolant as the level dropped well below normal, refilled coolant but the oil pressure still showed low at idle .5/1 on the guage. I didn't drive it on the track anymore but had to drive 3 hrs to get home. On the drive home there were no issue, car didn't over heat even with A/C on and oil pressure stayed normal. Took it in to get a coolant flush and a oil change after about a week of driving with no issues but right after the coolant flush my car started over heating again plus when I start the car the oil pressure gauge goes to 6.5/7 until the car warms up and then the gauge goes back to normal, usually after 3-5 minutes of driving.
I've talked to a few car guys and they all seem to have different opinions from "I've blow a head" to "don't worry about, theres nothing wrong."
The car has about 75,000km on it and 10,000 of those with the SC on it. I haven't noticed any performance issues with the engine or the SC and it seems to be running fine, looking for help.......

When my oil gets really hot the oil pressure reads extremely low because it thins out.

It was probably extremely high oil temps

Is this somehting I should be worried about or should get something done to cool the oil while pushing the car? I agree at the track the oil could have been thin when the pressure showed low pressure but what about now when I'm not pushing it and it shows hi (6.5/7)?

run some thicker oil as well. maybe like 20w/50 and it will take care of it.

one of my techs has a 06 Z that is basically stock and when we go out drifting and get the car hot, it will idle at like 5 psi. its pretty scary actually..
