Default overboost protection with uprev

I have a question I that I can't seem to find answered anywhere. In an overboost situation should you not see higher than normal MAF voltages and/or BFS values? What would happen if you set the MAF table values where voltage > x to 0, fuel compensation table BFS columns > y to 0 and the timing table BFS columns > y to something rediculously retarded--pun intended? Would this basically act like a fuel cut?
