LOL - I have to agree with your girl. My wife is just as critical. She knows the difference between everyday vs. really good Vietnamese. That being said, my list above is not bad. As with all good places, they have off days. You can definitely get good pho in MD, Pho 75 being one. I have been eating at Pho 75 since their first opening in VA [dating myself].

As for my and wife's other favorite soup, bun bo hue, only NOVA places get it even close to right. We usually make it ourselves. It's a labor of love though as bun bo hue requires a lot of prep.

There are also some very good Vietnamese caterers in the Rockville, Gaithersburg, Germantown area. We get all kinds of exotic dishes. Going to VA on a regular basis can be taxing. It's a regular trip for relatives on the weekends though.

How's pho in the east coast? I know you guys pwn us when it comes to steak, but CA has some awesome authentic Vietnamese pho places lol

I told her Pho 75 seems to be pretty good, she said,

"that's not really good, its a chain"

however she said its better then the places she's been to so far in MD.

NVA seems to have great pho thanks to a high population of Vietnamese.

- Is she Viet? Even chains can be decent.

I have had pho in Little Saigon in LA that was not up to par, while a little place in San Jose rocked me for breakfast. Pho at 0730 is the shiet!

Living here since the end of the war, I still can't get a handle on eating sausage, pancakes, eggs, etc. for breakfast.

Count me in. Being half Viet, I'm obligated to love this stuff so I'm down for Pho anytime. I'd like to go somewhere I haven't been before. I'm trying to find a place that makes Cha Gio half as good as my mother's.

Yup, they use to own a Viet joint and now her mom is a chef at a viet joint.
trust me, they're picky with "good" food. =)

at least I know where to go if I want balut.

Balut - Vietnamese vit lon! Good man you are! Not many can eat it, even some old timers. My family/relatives eat it with salt, pepper, sometimes with a little lime right out of the shell.

You are definitely right about "good" food. We always discuss who's got it and not, and where to just eat vs. where to really enjoy.

What restaurant? I am always interested in new places. Living in Frederick keeps me to the west side of things.

Does she make cha gio with lumpia, rice paper, or wrapped both ways? I can't find any MD places that make it with rice paper wrapping, only in VA. It's either my relatives or caterers by request.

Even my wife has problems making cha gio with rice paper wrapping since it splits so easily.

i went to this place 2 days ago and was very disappointed...they have very little 2/4 seater tables because they push everything together into large tables so your eating with people you've never met. Then they make you come in and eat finally when you’re finished and go to the register to pay they put a small sign that says cash only! (they weren't smart enough to put a sign on the front door) I wasn't paying with cash so they made me leave my id with them and go to two different atm's (because the one next door didn't work), and come back just for a $6 tab.
I suggest the one in aspen hill shopping center! FTW

I went to An Loi once, and I'm not gonna lie... I didn't find it all that good. It was pretty flavorless IMO, but perhaps I just got the wrong thing?

^ hahaha, you forgot "Pho Real!" in MD! The best Pho place I've been to is off a little road in Arlington... forgot the friggin name but it's pretty underground: that's how you know it's the good stuff! Pho 75 is overrated, it's just the McDonalds of Pho.
