Lafayette, LA Members?
You guys sound like you have enough interest to get something started. You may need to start advertising like we did to get our meet started. Our meet only started with about 5-7 Z guys wanting to meet up and hang out. It turned into the Lakefront meet on April 29 and consisted of 300+ cars throughout the day. Hell, maybe even about 400 throughout the day. It's just takes some effort. Thanks to Will(sumfknguy) for the flyer and the rest of the guys for advertising and pushing the meet, it turn into a blast.
Once all the work on this house settles down I'll have more time to plan and coordinate stuff. Perhaps we can garner the support of a local Nissan dealership for a place to meet. Maybe get some food going. Stuff like that.
I have a couple other ideas too. Maybe try to get some of the local tuners to come out of the woodwork for a little meet. Maybe get a dyno day going too (I believe Thunder Racing in Baton Rouge has a dynojet).

Although, dynoing during the summer is going to be really depressing. Trust me.
