How much did the insurance offer? And how did it compare to the KBB value?

If the car was purchased from a dealer they have to have you sign a refusal of gap insurance after explaining it. You might want to check you paperwork and make sure you didn't sign it when they were throwing all the papers at you to sign. It's easy to just sign where they tell you and not pay close attention. Especially when your excited to just drive your new car.

2005 350Z Performance @ 30K miles --- $25515 KBB Retail.

Depending on the information above, $25K might be a reasonable offer. If you don't have gap coverage, you'll have to eat-up the difference on what you owe. Insurance will not cover mods (unless it's spelled out on your policy).

Sorry to hear about your car man! That was just stomach turning what they did to it. But like everyone is saying, keep fighting and try to get a lawyer!
