No one seems to know. Even the person that tuned my car couldn't tell. From what he saw, there aren't any variables that change just with time. Some other things do seem to affect the ecu such as CELs.

Wider intake piping, such as the ones I used, my AEM duals, do affect the ECU i guess in a way but not due to time. The wider pipes confuse the ecu and give a rougher idle but thats about it.

^(not basing this on expert knowledge, just on what i saw)

I dynoed my car one day and then went back a week and a half later without changing anything and was within half a hp of what it was originally. it was a little hotter that day so I'm pretty sure that's what was the little difference.
