Contemplating on rolling the BACK fenders...

Are rolling the fenders a crucial and messy task??!! Is it common for the paint to chip off on the edge of the fender??

I'm considering getting a set of 19X11 inch wheels in the back...and they recommended me to roll the fenders... by the way...is 19X11 too big?? Should I stick with 19X10.5???
