I really want the new Nitto NT05s but thats the two closest tire sizes they offer.

Those are too big for 8" front and 8.5" rear wheels. 255/265 max.

both are great front tire sizes, but your front wheels are 8 inch and will not work. Then those tire sizes are to short to run in the rear, not to mention your rear wheels aren't wide enough either.

im gonna be running a 255/35/19(8' rim) and a 285/35/19(8.5 rim) well see in 5 hours when i pick the car up

That's an awful small tire for an 8 FOOT wheel!

255 tire on an 8" wheel is ok.
285 tire on an 8.5" wheel is too big.

You're not getting it. Sure you can squeeze a 285 or even 295 tire on a 8" stock wheel. We do it all the time for autocrossing. That's not to say it's the best setup for the street and everyday driving. The manufacturers recommended largest tires on 8" wide wheels is a 255, and on 8½" is 265. Their sizing takes into account safety, wear, ride comfort and mountability.
