I felt the same way. A buddy at work got a new Bullitt. Felt VERY cramped driving it. This was with the seat all the back. Not as much head room and my knees were crammed against the steering wheel.

When I had my old Camaro (94), it wasnt nearly this bad. I'm not sure what they did to the current generation Mustang, but it is not close to how I feel when driving the Z.

Also, the shifter did not inspire any confidence in changing gears. The spacing seemed very vague.
