HELP 04' Z Temp gauge reads HOT but not overheating!

Angry HELP 04' Z Temp gauge reads HOT but not overheating!

Hey guys I wanted to see if anyone has ever dealt with this issue. (Back story) About a month ago the temperature gauge on our Z started reading HOT (about 3/4 the way up) but never showed signs of actually overheating. Radiator never felt like it was overheating, never threw out coolant, and engine never sputtering etc. It is now 3 weeks later and we have replaced radiator, coolant temperature sensor, thermostat, and water pump and we still have the exact same issue. The Temperature gauge starts off low than moves to 1/4 way on gauge and after driving her around the block the temperature shoots up to high and has zero signs of overheating. I've even replaced the coolant temp sensor 3 different times with different brands, thermostat twice just to get rid of my doubt and still we have the same exact issue. Keep in mind the car runs great no knocking or smoke absolutely nothing at all. Also we have bled the system more than a handful of times each time we do something different to get out all the air in the system. Please help!!!!

That's just it I've bled the system more every time I've changed a part. I've seen one video where a guy saids he had to elevate the front end of his Z has anyone ever heard of this process to bleed the system??

Install a different temp sensor that reads off a different gauge
