Is it nesseccary to run wires to doors?
Installing new head unit, speakers, amps, and sub in my 03 touring Z.
Can i just run wires from the speaker wires on the harness, to the amps?
Or is it absoultely neccessary to run speaker wires from the amp, to the speakers?

you could just run from the harness to the amps. I don't really see any problem in doing that, unless the wire can't support what the amps will put out, in which case they may burn up.
Personally, I'd just go ahead and wire it all the way out. "If you're gonna do it, do it right." That's the general rule that I follow.

if anyone else has opinions, this is what i am talking about:
the front speakers are a pain to route new wires to...so I ran RCA's from the HU to my amp, and then a set of speaker wires from my amp back to the HU wiring harness and connected them to the front speakers.
the rear speakers and sub was super easy to route new wiring, so all of that was new.

neccessary? no, good? yeah, with the 300/2's 150 watt per channel output, the stock what 18 guage? wire will heat up...it may not cause much issue in the short term, but over hte long run i have seen them burn up and fail, at best you have failed wire SOMEWHERE in the car you gotta track down, at worst it cuase cuase a fire...
this of cousre depends on what oyu listen to and stuff...but i NEVER have installed a system in a Z or G without running wires into the door if i am using that location. The Zs are a lot easier than the Gs, whcih has an even tigher opening than the Z...but yeah, it snot simple, and requires a few hours of your time if you are doing it the first time...

300/2? Forget about it. I used the stock wiring. I have a 300/4. It sounds great and works great. My last 350z I did the whole shebang. Ran wires through the door molex connector etc Too much of a PITA to do again.
My opinion on rewiring is as follows:
If you're going competition, then it shouldn't even be a question
If you're going for quality, then its up to you
If you're just running new speakers for daily driving, don't bother
