my Z has about 52K miles on it, but most of them are from highway driving and I don't really push the car hard while driving either. Can I get by with just install kit 1?

3.9 are strictly special order from Japan now. the 4.08 is $200 cheaper, and only a 4% difference, and as such, it's the only one we plan to keep on the shelf for the future
norapat1 - install kit 1 is the minimum you need. Really doesn't matter much if its highway or not, at anything over 20-25k miles or so, I would not chance it trying to use stock bearings, and would highly recommend install kit 1 and 2. If reusing the stock bearings, you are now asking alot of your installer to remove the existing bearings, and then replace them, without damaging them at all, and that's assuming he feels they look good enough to reuse once they are removed. I personally wouldn't risk it, but it's up to you
