NA power without altering ECU?

I just had a question regarding mods for my Z. To make a long story short, I had a pretty bad (mostly due to my inexperience in knowing what to get/where to get it installed) experience modding my old car ('01 1.8T Jetta), and ran into tons of problems with the ECU, and engine check problems, etc. I ended up replacing my MAF sensor more than 4 times, my A/F ratios were usually off from what I was told. Anyways the point is I've been pretty careful to not mess with any kind of ECU changes in my Z. My question is, if I start going all out with NA mods, like headers, hi flow cats, cams, etc am I going to have to change my ECU settings? I really dont know much about A/F ratios, or what I would have to do from keeping the engine/ ecu happy. Right now the only bolt-on mod I have is an Invidia exhaust, but I was hoping to get RT cats, Nismo headers, then whatever else I could without having to change ecu. I guess the simple way of putting all of this would be this:
How far can I take my modding (bolto-on's) without having to worry about damaging the engine or having to deal with ECU settings.
Sorry I hope most of this makes sense, but like I said I'm not too experienced with all of this. And I figure this is my best place to learn.
