I'm working on something like this as a side project, but I have no idea when I'll have time to work on it.. been extremely busy at work. 
If you want to shell out the cash for a Motec ECU, it can do datalogging that will provide all of that information in realtime to an in-car PC or laptop.

several A/F kits with data logging provide "guage and telemetry screens, Note the PC is usful for several other apps as well , such as NAV , MP3 , DVD, rear cam, OBD2 dumps etc etc.
Logger examples :
a) Innovative technolgies LM-1 with aux box.
b) PLX devices M-series controller.
c) Xetronix (cheaper with more limited SW)
Gurgen did a write up on the G35 frum WRT the LM-1 and tap points. Basic Car computer + A/F + datalogger runs ~$1500-$2000 ( installed).

IMO , avoid the Lilliput 7" XGA.
I bought one last year , since the price was so00 attractive.
However; with the Touchscreen option , sunlight readablity really suxxxx. The TFT distributed thru Xenarc are significantly more daylight readable. If you can live "without" the Touch screen,
"do so" , since the touchscreen reduces brightness and contrast significantly.
If you do a search on the Z and G forums CAR PCs you'll see quite a few installations with 7" TFTs mounted in the Z-cubby. On a G it was more cumbersome , one of two routes ( mount a custom housing in the nav poeket or replace OEM radio with a DIN kit and use a DIN mounted XGA housing, now readily availalble cheap.

Shopping around gets parts far cheaper though.
If I had the space in my G ( I refuse to suck up what little trunk space I have ) , I would have used the OPUS CAR PC chassis+PS.
In my G I used the OPUS power supply and M1000 MB and a custom chassis.
In a Z you have plenty of room behind your seats so if you want a very high quality solution I would recommend the OPUS system, "do not skimp on the Power supply"; however, there are many other less expensive , an less robust options:
