Default Inquiry regarding intakes (Air/Fuel Ratio)

Okay, I have wondered about this even before I considered putting an intake on my car. It boils down to this, how much more air or how much less air is getting into the engine with an intake compared to stock. Observing dyno charts, I assume that the air going into the engine is similar to stock since gains are not tremendously large. IF there is a different amount of air getting into the engine, does the MAF automatically send the proper information to the ecu to balance out the fuel being spit out by the injectors? I neither want my engine to run lean or rich. I want the engine to be running at that perfect A/F ratio. Also, I have read about people installing an 02 bung to keep track of their A/F ratios. How does that work? Please enlighten me. Hopefully someone knowledgeable within this field will be able to answer my questions. Thanks.
