Not a good idea to gut them for a few reasons.
You'll lose a good set of cats for smog later on down the road.
You'll create more turbulence in the exhaust which can negate any gain you may have by removing the cat material.
Your also keeping the smaller piping diameter.
Your best bet is to invest in some test pipes. I recommend resonated test pipes from Fast Intentions if your looking to get rid of the cat and keep rasp to a minimum.
Check us out for any great deals on Fast Intentions exhaust needs.

Most avoid committing the Federal Felony of violating the Clean Air Act by illegal tampering with oem exhaust. If a shop is caught they are subject to jail and $10,000 fine PER CAT.
Selling a tampered vehicle is fraud and allows the future buyer to sue you to force restoration to oem years after a fraud sale! Depending on state you have 7 years to worry.
Tampering can void warranty on engine and allow dealers to refuse to service your car.
