I have 285/35 on 18x10.5 +15 rear wheels that sits pretty flush to the fenders while the fatter tires fill up the wheel well nicely. IMO spacers would make yours look better since your fronts have a slight poke while the rears with the more narrow tires make it look tucked in a bit.
Installed Raceland coil overs. Lowered around 3". Rolled rear quarter wells, & pulled the front fenders a little. I'm definitely going with wider tires in the rear when these wear out. Love the way it looks. It gets a lot of attention.

Just got a new set of shoes for the Z installed today! What a difference a lightweight wheel/tire combo makes...

Looking at getting some 18x9.5 +20 fronts and 18x10.5 +20 rears soon. After looking all over the place about wheel and tire fitment I feel a little overwhelmed with all he different answers I've seen. I have an 08 on stock suspension. Wanting to keep the diameters close to stock to limit any problems with VDC etc. From what I can gather 255/40 fronts and 275/40 rears should be the best tire size to avoid any issues or rubbing, does this seem correct?

That will work fine. Good selection of tires in those sizes as well.

Would a 285 be better that a 275, or is the 275 best? I don't want the rear to look like it's a stretch fit compared to the front. Hopefully that makes sense.

Here are the sizes and diameters in question...
245/45-18 26.68 OE Size
275/40-18 26.66 Best Replacement Size
285/40-18 26.98 Alternative Replacement Size
275 is ideal fit but you can go to a 285 if you wish. The + 0.3" isn't all that significant (meaning will not throw off VDC) when paired with 255 fronts, Also, good luck finding 285/40-18s. Last time I looked a couple years ago, tire selection in that size is about 5% of 275 sizes. Might be different now but I doubt it..... tire availability tends to go DOWN, not up in these sizes.
Hint: You won't SEE a difference. Honestly, the performance (extended hill runs, no track) differences are nil. Pyrometer tells that story. The weight difference to me keeps me on 275s going forward.

Thanks for the info! Yeah looks like I'm going to stick with the 275. Like you stated above 285/40 doesn't have as many options as the 275/40.

Thanks for the info! Yeah I think I'll stick with the 275. As you said, the 275/40 has more options compared to the 285/40.
Going for a slightly meaty sidewall, not sure how tall it'll look on our cars. Pilot Sport 4s is available in this size so that'll be my choice. Hoping to get some pics to know if it's too thick or not.

18x8.5, 18x9.5 +24 offset all-around work meister 3-piece. 3.5 inch lip up front and 4 inch lip in the rear
I know this is old, but what sized tires or mods. That looks perfect. My son has a ultra yellow vert. Hunting down some 18's. I had 19's on my M3 ZCP and tires are brain damage money in that size. I do run 20's myself (with Michelin PS4s) but I have a Cadillac that is like twice the size of the 350z .
If you scroll up you'll see my car with these wheels when I first bought em. They were 18x10.5 squared, & the quarters swallowed up those 18'z, so I went to 20x11 in the rear, & the fitment is so much better. I'll use the 18'z as drift spares, or drag set up. I love the look.
I'm looking into buying wheels for my Z. I want 18s but have them wide and not rubbing. Please help and send recommendations 🙏
Lots of options in this thread if you read through it (or even the last couple pages), but here's your spoon for a staggered setup with no rolling at stock height:
