I tried searching but couldn't find anything to answer my question. On average how much space would I gain from getting my rear fenders rolled (i.e. .25'', .30'')?

You would gain almost the whole width of the lip in side the fender. I think they are almost 1/2 inch wide, but you can only roll them flat leaving some space and the width of the metal itself.
I have mine rolled and I would say I gained at least .25 of an inch or more. Pretty hard to give an exact measurement obviously but there was a huge amount of room gained, lets put it that way. If ur wheels are rubbin thats all you will need to fix it.

That would be kinda difficult for me to estimate since I don't know how far they would actually get rolled/pushed out. Thats why I asked those who actually had there's rolled for a rough estimate, wasn't lookng for an exact measurement.
Rolling your fenders will not push your fenders out. It will only fold up that little portion sticking in at the edge of the fender. How much you want rolled depends on your preference, so you could get a pretty good estimate.
You can pull the fender out some with the roller. Between flattening the lip and pulling it out I gained about 1.25" on the front and 1" on the rear.
