Understeer
From the reviews, it sounds like our baby is going to have some pretty strong understeer. I also understand that this is safer than oversteer, but our enjoyment meter might go up a notch or two if we were to "dial out", or down the understeer. What do you think that would cost? Would it be worth it?

This is a pretty common problem for M3's and M5's also. Easiest way to dial it out will probably be to go with a stiffer rear anti roll bar or softer front. Playing with tire pressures helps greatly also. Autocross guys will probably just disconnect the front anti roll bar all together.

Since it looks like the suspension is fairly compliant, how about just starting with stiffer rear springs and possibly some upgrade shocks. Perhaps, the first thing I'd do is try disconnecting the front Strut brace to see how it changes the dynamics. Be prepared to lose some steering response though.

In danville they said they said suspension tuning was one reason for the 20 day delay, maybe they got it back to neutral for us... it was when C&D tested a prototype according to the tester. If the front strut brace would make it understeer, then that would probably be the problem since the brace wasn't there when the prototype was tested. This isn't something to worry about yet IMO. We'll find out around sept.

Not sure whether this has been posted here before or not, but this chart from a BMW tuner's web site shows what to adjust to change the amount of understeer or oversteer. If the car has a good weight distribution (i.e. not excessively front heavy), understeer should be correctable. I'm still not convinced that understeer is a problem with the 350Z.
