This is also a good way to know where the factory stall is at (@ what rpm)

I have a 3000rpm stall converter in my 72, if anyone cares. Takes a second to 'spool' up.

Dosent the ECU close the throttle plate most of the way if you step on the gas and brake at the same time? This would not be good for launching.

Your ECU does have a "soft" rev limiter that works as you describe. You need a reflash to get around that. The pre-05 ECUs do not do that, but have a hard fuel cut. If you have an aftermarket ECU, that will work, or again, a reflash.

When you press on the brake, the ECU does try to kill power, but there are ways around that (disabling some of the VDC input signals, brake switch line to ECU, etc); or again an aftermarket ECU that has full control of fuel and timing will not be affected. I don't think the throttle actually closes when you press the brake and gas pedal at the same time - but I have an 04 so not 100% sure on that for your car.

And davidv, give it a rest - one post was enough.

Thanks for the info rcdash, I have an 04.5 Roadster... so assuming its not going to be easy to get a 'proper launch control', how can I get it so I can rev higher with the brake applied? I read in another thread somewhere about disconnecting something underneath the rear of the car. Any thoughts?

On that note I wont be entering any burnout contests either because it wont let you rev over 3000 RPM with the brake on.

There are a couple good threads on this. Here's one I remember off the top of my head (not 5AT specific, but many of the concepts apply):
