Did you get a chance to do a thorough purging with spill funnel? When everything runs fine, and then you start overheating after the repair job, all signs are pointing to air in the system...rather than an engine problem. I hightly doubt you are ligting heads on the stock block. We ran Tyler's car at 12psi on the stock block for months...no lifting of heads. Have faith!

I have all faith that you're right about this, and I really appreciate the helpful phone call

When you do the heat on full blast test...
1) Do you have to turn the A/C unit off when blasting the heat? Not sure if thats a stupid question, but my car is pissing me off.
2)Do you blast the heat when the motor is at operating temp or when the motor is cold? Probably another stupid question, but I hate my car right now.

Good news! I worked on my car this weekend and I performance coolant purge as Sharif suggested (I also swapped the thermostat as a precautionary measure). It took a while but sure enough it did just the trick. I've driven the car a bunch since then and it hasn't missed a tick.
Anyway, I'm super happy to have my car back on the road, and in the end it turned out to be a VERY simple thing that I got overly stressed about.

How did I miss this post!
Can't wait to get her back, she will be awesome, I am certain. Also, get a video for me.
I plan on taking it to dynolab after I leave from your shop for kicks and giggles.
