Make sure to add A arms and camber arms to your shopping list.
What is your definition of practical? In other words do you want them to last long or simply suit your aggressive driving behavior? Wider tires in those offsets will force you to run excessive camber.

If I had to choose between the two, I'd say I want them to suit my aggressive driving.. Or rather, as long as there isn't any rubbing issues. What tire sizes would you recommend?

I'm thinking of purchasing a set of rims 19x9.5/10.5 both with 30 offset, Volk GTS... Will these require spacers to not look silly? I'm not worried about HELLA FLUSH and my car is stock suspension and everything no rolled fenders, but I might plan on dropping it a small bit in the future. I'm getting a decent deal on them, but I want to make sure they will look good as I have no way of seeing what they look like on my car. If anyone has pictures of these offsets I would like to see them.

Higher offsets = sunken wheels look.
That pic was to illustrate an extreme example, but generally if you don't want your wheels to look like they are sitting inside the fender (and you don't plan on using spacers) you should try for a slightly smaller offset. It's up to you though.
There are tools somewhere around here to find out exactly where those wheels will sit with those specs.

Well, it has come to my attention that the Rays OEM NISMO rims are 30 offset... So would this be the same as the Volk GTs? I have tried to understand what these numbers mean, but they don't make sense and any explanation here on the forum really is hard for me to comprehend. Call me stupid. But with these having the same offsets, they should stick out the same amount right? even though they are 18s and the Volks are 19s... They have same widths and offsets.
