Buying new tires of different size/seeking opinions

I'm in need of new tires. I've got the 06 grand touring/track wheels:
Front: 18x9
Rear: 19x10
with the stock Bridgestones measuring:
Front: 245 40 18 total height 25.7
Rear: 265 35 19 total height 26.3
I'm interesting in giving the Hankook V12 Evo tires a shot based off a recent Car and Driver review. I thought I might try to add some width:
Choice number 1:
Front: 265 35 18 total height 25.3, difference of -.4 inches
Rear: 285 30 19 total height of 25.8, difference of -.5 inches
Choice number 2:
Front: 255 40 18 total height of 26, difference of +.3 inches
Rear: 275 35 19 total height of 26.6, difference of +.3 inches
Car is a daily driver with plans for limited (and beginner) HPDE. Please provide insights from experience.

Choice 2 seems to be the safest (most conservative) choice, and very appealing for that reason.
Barring any more thoughts I'll make a purchase and put up a review.

WOW.. I thought I wrote this or something (: because I have the the same set up as yours (06 GT wheels and tires) haha anyways I went to local nissan dealership today and they recommended hankook tires over the stock ones.
The price was $815 included install from Nissan, but I didn't buy them because I get 20% off from discount tire and tire rack so I might have to go check out the localshop tomorrow and find the best price....
Let me know what you're going to get and stuff.

Go 245x40 18F and 275x35 19R. That is the best set up you can get. There is not much of a different of you go 255's in the front, but I'd not recommend. BTW, I had the followinf set ups:
Option 1:
245x40 18Fx9.5
275x35 19RX10
Option 2:
255x40 18Fx9.5
285x35 19Rx10
Option 3:
275x35 18Fx9.5
295x30 19Rx10
Option 4:
265x40 18Fx9.5
285x35 19Fx10

Hunter, I'm asking myself the exact same question. I've decided on the Hankook V12 evo tires because of the reviews I've read and the cost. I'd go with the Michelin PS2s but they are twice the cost. The other advantage to the Hankook V12s is that they are a symmetric tire. That means that they can be dismounted and rotated to almost double their life.
I've narrowed it down to two different size options:
255/40-18
275/35-19
or
255/40-18
285-35-19
I do autocross the Z and I would like a bit more rubber on the ground, particularly up front. From a non-practical standpoint, I have always felt that the OE sizes tend to look a bit stretched on the wheels so upsizing will help that some as well.
ITOzann, can you give some more detail as to why you didn't like the 255x40/285x35 set you had?

I went with the 255/275 combo. Thanks for the input folks. I ordered from tire rack and the 255s were on back order so it will take a couple weeks. I actually got a call from tire rack the day after I placed my order. They wanted to make sure I knew the tires were on back order. I think that's pretty good customer service.
I will post reviews after I get the tires.

I had the tires mounted today. To review, I got the Hankook V12 Evos because of their favorable write up in Car and Driver.
Sizes:
255 40 18
275 35 19
Purchased the tires from tire rack and had them shipped directly to my installer which worked out well. Installer was Rossi's tire in Monterey, CA. I scheduled tire mount/balance, alignment (most aggressive camber within factory spec), and curb rash touch up.
Review of Rossi's:
Touch up guy never showed up so that work was not completed. Work was re-scheduled for tomorrow. Steering wheel is slightly off center and will be corrected tomorrow. Slight gouge on rear left wheel that I never noticed before...will be touched up by curb rash touch up guy tomorrow. Old wheel weight adhesive still on some wheels. Customer service is good. Overall I give them a B-/C+. We'll see how tomorrow goes, but I feel that maybe they didn't quite give my wheels the attention to detail I desire.
Alignment specs:
Again, I asked for max negative camber allowed within factory specs.
Before alignment:
Front Left: -.4 Front Right: -.7
Rear Left: -1.4 Rear Right: -1.6
After alignment:
Front Left: -.7 Front Right: -.8
Rear Left: -2.2 Rear Right: -2.1
Factory specs:
FL/R: .2 to -1.3
RL/R: -1.1 to -2.1
They got it on the rear but were unable to get as aggressive on the front. They indicated stock adjustments wouldn't allow for it. I would be interested to hear your opinions.
Tires: I will attach pictures so you can see how they differ from the stockers in terms of fitment on the wheel. The additional width is noticeable. The mild stretch from the stock tires is no longer. I think they look fine...just my opinion.
Noise: I notice no difference from worn stockers at all. I remember my new stockers (RE050) being very loud new and these aren't that loud new.
Driving: Can't really compare fairly because of the alignment. The steering feels lighter which I am grateful for. Turn in seems a little softer. On center feel isn't as tight. With the alignment adjustment however, it's impossible for me to tell which factor is responsible for the change. Rear end seems to come around quicker which I believe is all alignment.
Again I took pics and will try to post so you can see the difference in look. I would also like opinions on the camber set-up for mostly daily driving. -2.2 looks pretty aggressive.
Overall I'm happy with my tire purchase. I'l be doing beginner HPDE later this calendar year and will report findings when that occurs.

Install a set of camber arms up front it you want/need nor neg camber. Then on the rear have them back it off to -1.8 to gain a little more traction. There is no need for that much camber in the rear with normal street tires.

Thanks for that advice. I'm ignorant when it comes to proper alignment settings, but -2.2/-2.1 seems a little extreme even to my untrained eye. I'll move closer to your recommended settings.
Another observation. Car feels a little more sluggish. I have read similar comments in other posts about this. I thought I was crazy, but apparently other guys experienced something similar when increasing tire size.
