You can set up MAP based fuel set-up via E-manage but not sure if you can physically remove the MAF sensor since the ECU will be looking for it. The E-manage clamps the MAF sensor to around 5v to prevent the car from going into limp mode.
I haven't personally tried using the MAP via the E-manage but have it already hooked up. I will eventually when time permits play with speed density set-up.

Although you have to leave the MAF in place (the ECU will still use it to idle, start, and cruise the car), fuel enrichment (under boost) will be adjusted by referencing MAP/RPM...which essentially makes it a speed density based system. It's pretty neat!
