Motul (RBF600) is what people are using when they track their's Zs. It's expensive and probably a bit of overkill for the street.
I'm using Valvoline Synpower brake fluid. It has a higher wet and dry boiling points than the "normal" brands. More than sufficient for street and occasional autocrossing.
Search the Motorsport->Autocross/Road forum for "brake fluid" and you'll find all kinds of threads discussing high performance brake fluids like Motul.

If you're doing normal street driving, then replacing the fluid annually is more than enough. If you talking about taking the car on the track, then depending on how often and how hard it's going to be driven, your replacement time may vary from every 6 months to as often as before each event.

Synthetic means different things. You can't use DOT 5 brake fluid, which is a synthetic silicone based brake fluid. Synpower is DOT 4 and is a synthetic glycol based fluid. It's the silicone that kills the rubber seals in our brake systems, not the fact that it's "synthetic". Motul is a DOT 5.1 which is acceptable too.
