If you used the Joe Gibbs stuff for a little while your probably fine.
As for the viscosity, I've never had a problem with straight 40 (thick stuff) and also 40 with a viscosity enhancer as for as the VTC's. So honestly, I doubt that has any bearing on your issues. (Not suggesting you use anything outside of your local temp ranges)
Unfortunely, I can't make out the noise from your vid. I would normally assume its the timing tensioners but if it doesn't go away when the pressure is at 20'ish psi its likely a different problem. I know there are a few VQ's on You Tube with the tensioner noise, maybe you can go through a few and see if they sound familiar. It's also possible you have a damaged or broken upper tensioner if you say the noise goes away with a little bit of rev's. The list is long as far as possiblities.

Sorry you are having issues. I replaced the oil pump with a Cosworth and am wishing I had gone RevUp. I have the reverse issue, too much pressure. The gauge maxes out at start up above 120 and after it is warm runs just above 30 at idle and gets to 120 above 3k. I am running Castrol Edge Titanium 5-20 to get it "DOWN" to these numbers.
I have and am getting ready to install oil temp and pressure gauges to make sure the stock pressure gauge is not the issue.

I just listened to that vid you posted again and it doesn't sound like anything I've heard before. I'm assuming to fix you'll have to pull the front cover and inspect, and possibly back-track to the short block. But first go through the basics, check compression, do a leak down and read the plugs to confirm its not the head/valves/block related. Wouldn't hurt to start with a power balance test through the Uprev Software. To me it sounds like something was missed, but it could be as simple as a broken main tensioner, or as bad as incorrectly sized bearing. Unfortunately, the vid's sound quality isn't strong enough to tell, needless to say it can be tough to hear and diagnose in person.

not really, mine is much less in rhythm with the motor, its more random and is only audible after the engine is idling warm. the rpms are too high when starting to hear it, the car has to idle down for it to happen. and it also happens for the first 1-2 seconds at each startup, like oil isn't where its supposed to be right away. i think it is very similar to what the_coupe had on his build.
i will try to log some info with cypher when i get around to it. i also had a mechanics stethoscope and i could not immediately locate the noise, but i didnt have a lot of time to mess with it
