There are several stickies in the Wheels & Tires section in which you posted this topic that address offset. I suggest reading through these to determine how much offset you need. Tire will also make a big difference on how flush you sit. You can always spacer your way to the offset you want. My guess is you'll need 10mm - 15mm spacers to make those wheels sit flush-ish.

But I thought the lower the offset the more the wheel sticks out from hub/fender? You're saying they would be tucked in too far and would need spacers?

That's correct. Adding spacers effectively lowers your offset. Think of spacers as negative thickness in relation to offset. Using 15mm spacers would be equivalent to subtracting 15mm from your wheel offset.

If the factory setup is 18x7 and 18"x8" +30mm offset, how would wider wheels and less offset make them be tucked in too far?

Don't worry, backspacing and wheel offsets are a little counterintuitive. +15 or +20 will make them more flush. Use a wheel and tire calculator on the internet and you'll find a setup you'll be happy with.

when I said I wanted to order the 18x9.5 30mm and 18x10.5 25mm, the rep said this would be very aggressive, got me thinking they would stick out too far but I know they often don't really know much about what fits on what car.
I'm also just considering going 19x9.5 22mm on all 4... actually there are 22mm and 15mm available, would it make sense to do 19x9.5 22mm front, 19x9.5 15mm rear? I like the look of the 19s, could do the same 245/40/19 front 275/35/19 rear...

The tire/wheel rep was likely being over cautious saying that would be an aggressive setup.

Tucked in too far is relative. You stated that you wanted fitment close to flush and +30mm won't get you there with this setup. I remember my G looked as though it needed something near +5mm to get flush with 10.5" wide wheels, particularly in the rear. I think they can tolerate lower offset than the Z, but don't quote me on that.
Typically with the Z +15mm on 10.5" wide wheels with appropriately sized tires will get you near flush once lowered. Here is my car with 10.5" wide, +18mm wheels with 285/35 tires on all four corners (pre-alignment). It sits as flush as I'd like, though I'm sure I could spacer it further if I wanted. I do run a bit of camber now since this is basically my track car, so take that for what it's worth.
